The Latin name of Alburnus is Chalcalburmis chalcoides, which has been hunted in the Kura River since ancient times and is a valuable fish. It lives mainly in the south-western part of the Caspian Sea, 3-5 km from the coast, at a depth of 30 m. Interestingly, as the water temperature drops, the inflow of alburnus into the river accelerates. Thus, if the temperature in the water begins to enter the river when it is 12°C, it reaches a maximum at 10°C, and at 8°C the process ends. The body is elongated, slightly pressed on the sides, shiny and the head is small. Its lower jaw is large and extends forward. Its body is long and its head is very small. Its eyes are silver, its back and anal fins are black, and its abdomen is white. There is a black dot in the upper part of the eye. It is a type of extremely oily and tasty fish. It is 20-40 cm long and weighs 150-180 grams. Lives 5 years. The local community also describes this fish as a return from salmon. Although this fish is the main fish eaten and caught in Mughan, it is used as a food source only in the winter months before spawning and in March. There are many benefits of alburnus. This fish is rich in vitamins, micro and macro elements, proteins and fats. The proteins contained in alburnus are easily absorbed by the body. It is mainly useful for the digestive system. Alburnus is processed and consumed as fresh and cold-smoked.
